Family Friendly "Kid APPROVED" Veggie (SSSSSSHHHHH) Meatloaf

Are you having a hard time finding meals and foods that your kids will EAT?!?!!! My boys are 6.5 and 3 and although they have always been pretty GOOD eaters, we are getting to a point where they think its "COOL" to not like all these delicious meals that I make---- FREAKING FANTASTIC! So whatever my 6.5 year old does, my little one wants to follow and right about NOW, I AM OVER IT! (haha) SOOOOOOO in an attempt to get some more veggies into their lives, I am HIDING them wherever I can. Check out this cute video of WHAT my boys thought about the most DELICIOUS meatloaf that I came up with. (MOM-1, Boys-0... SCORE!)
My Go-TO EASY Healthy Meatloaf
Ingredients:
1 pound ground turkey
1 pound lean ground beef
2 egg whites
1/2 cup whole wheat breadcrumbs
1/2 cup cauliflower rice (I use the frozen from Trader Joes)
3/4 cup grated zucchini
1/2 packet Sazon Tropical Seasoning
1/2 cup low-sodium ketchup
Directions:
Pre-Heat oven to 400-degrees.
In a large bowl, mix egg whites, breadcrumbs, cauliflower rice (its OK if its frozen), zucchini and Sazon seasoning until blended well.
Add 2 lbs of meat and mix really really well.
Dump into 9x9 glass baking pan.
Bake COVERED for 45-minutes.
Remove from oven, spread ketchup on top and bake an additional 20 minutes or until center is no longer pink.
Serve with veggies or salad or in our case, SPINACH!
